Antique 19thC French Sabatier Rue St Honore 84 Chef Knife - Rare Hand Mark-WWI Trench /Theater Modification. Here is a rare quality piece of cutlery history manufactured in 1880-1900. This 19th-Century Antique French Sabatier Chef Knife represents a unique hybrid crossover piece- highly desirable for both elite vintage kitchen cutlery purists and WWI Militaria/trench art collectors. Knife measures 17.5" OAL with a High-Carbon Steel (Thiers Forged 12.5" blade. This massive blade features the highly sought-after "Main Ouvert" (Open Hand) trademark, hand-forged in Thiers, France and stamped for the iconic high-end Parisian culinary boutique located at 84 Rue Saint-Honore, Paris, an early, hard to find logo. Later in its lifecycle, this elite piece was field modified into a combat/survival tool showing casing an authentic, beautifully preserved stacked leather washer handle compressed over a traditional Nogent rat-tail tang, locked mechanically at the butt end with a peened steel washer, which was a hallmark style of a WWI theatre-modified knife.The blade shows honest surface wear, some light scattered pin-prick pitting, excellent blade edge with no damage.
